Folkestone Food Market – Delicatessen and local produce
In the basement of L&B Restaurants’ Market Square is their latest venture, the Folkestone Food Market. Lucy and Ben Cuthbert, the power behind The Pullman, Lubens, Market Square and The Harbour Inn have been thinking of their own food market since taking over the Market Square building. The basement area lends itself to such a project. Managed by Lucy and Josh Cottingham they spoke to Folkelife about the latest addition to the clan.
Josh: “What we’ve got here is an onsite bakery lead by James who’s the Head Chef at Market Square. He’s baking bread, pies, pastries etc and those are on sale here. We also have a deli counter with charcuterie and cheeses; there are some Kentish cheeses in there and some other tasty bits and bobs. Foodari supply our fresh fruit and vegetables which are local and pretty seasonal.”
L&B Kits
Josh: “Because we have the pubs in the L&B group we’re selling some of the wines you’d get there, here in the market. We’ve got some dry and less perishable goods too on offer.”
Lucy: “Also, if you want to create some of our signature dishes at home, we’ve got kits here on sale too. So there’s a Luben sourdough pizza kit and paella kit for sale. We got a view to producing L&B favourites kits with selected produce, which ties into the recently set-up L&B Restaurants YouTube channel, where you’ll be able to learn how to make the dishes.”
Josh: “We stock some local produce here such as the vegan Folkestone Baycon Company, meat from butchers in town and Docker Beer. In time it would be great to get other traders here too, with local produce, selling their stuff. But, for now, we’re connecting to our L+B apps and our points system will include things you buy from here. You’ll be able to buy via the app too, and click and collect.”
